  • 1 lb lean ground beef
  • 2 garlic cloves (crushed)
  • 2 tbsp gluten-free flour
  • 2 tbsp tomato paste
  • 14.5 oz tomato sauce or passata
  • 5 cups beef broth
  • 5 dried lasagna sheets (broken into pieces)
  • 2 tbsp milk
  • ¼ cup parmesan cheese (finely grated)
  • Handful fresh basil leaves (for garnish)
  • 2 tbsp fresh curly parsley
  • ½ cup mozzarella cheese (grated)

Instructions

  1. In a large soup pot, heat the olive oil over medium heat. Add the chopped onion and ground beef; cook until the beef is browned, about 6 to 8 minutes, breaking it up as it cooks.
  2. Stir in the crushed garlic and gluten-free flour; sauté for an additional 2 minutes.
  3. Add the tomato paste, tomato sauce, and beef broth. Reduce heat to low and bring to a gentle boil.
  4. Add the broken lasagna sheets to the pot and cook for about 15 minutes until tender.
  5. Stir in milk, grated parmesan cheese, and most of the fresh basil leaves; simmer for another 5 minutes.
