  • 1 pound fresh broccoli (2 large heads with stalks)
  • 1 large Yukon Gold or Russet potato (peeled and chopped, about 12 oz)
  • 4 cups vegetable broth
  • 2 teaspoons kosher salt
  • 1/4 teaspoon ground black pepper
  • 1/2 cup plain Greek yogurt
  • 46 ounces sharp cheddar cheese (grated, about 1 1/2 cups)

Instructions

  1. Separate the broccoli florets from the stalks, chop the stalks into small pieces, and cut the tops into smaller pieces.
  2. In a large soup pot over medium heat, heat olive oil and butter. Add chopped onion and sauté until softened, about 5 minutes. Stir in minced garlic for an additional minute.
