Ingredients

Scale
  • 12 oz pasta (penne or fusilli)
  • 1 can (14.5 oz) diced tomatoes
  • 2 cups fresh basil leaves (chopped)
  • 1 medium onion (finely diced)
  • 3 cloves garlic (minced)
  • 2 tbsp olive oil
  • 3 cups vegetable or chicken broth
  • 1/2 cup heavy cream or half-and-half
  • 1/4 cup grated Parmesan cheese
  • Salt and pepper to taste
  • Optional: Red pepper flakes for heat
  • Optional protein: Cooked chicken or shrimp

Instructions

  1. Heat olive oil in a large pot over medium heat. Add diced onions and sauté until translucent, about 3-4 minutes.
  2. Stir in minced garlic and cook for another 30 seconds until fragrant.
  3. Add diced tomatoes (with juice) and pasta to the pot; stir well.
  4. Pour in broth, bring to a boil, then reduce heat to medium-low. Cover and simmer for about 10-12 minutes, stirring occasionally.
  5. Once pasta is al dente, stir in heavy cream, Parmesan cheese, and most of the basil (reserve some for garnish). Cook for an additional 2-3 minutes until thickened.
  6. Season with salt, pepper, and red pepper flakes if desired.
  7. Let rest for a few minutes before serving.
