  • 1 medium onion (diced)
  • 2 medium carrots (diced)
  • 3 sticks celery (diced)
  • 2 medium potatoes (peeled and diced)
  • 23 garlic cloves (minced)
  • Kosher salt and pepper (to taste)
  • 2 cups cooked chicken (chopped or shredded)
  • 1 teaspoon dried thyme
  • 1 teaspoon turmeric powder
  • 1 tablespoon curry powder
  • 1 tablespoon gluten-free flour
  • 1/2 cup Jasmine rice
  • 5 cups low-sodium chicken broth
  • 14.5 ounces unsweetened coconut milk (one can)
  • 2 large sour apples (peeled, cored and chopped)
  • freshly chopped parsley (optional)

Instructions

  1. Heat olive oil in a Dutch oven over medium heat. Add diced onion, carrots, celery, potatoes, and minced garlic; sauté for 5 minutes until softened.
  2. Season with salt and pepper. Stir in cooked chicken, thyme, turmeric, curry powder, and gluten-free flour; cook for 2-3 minutes.
  3. Add Jasmine rice, chicken broth, and coconut milk; bring to a boil then reduce to a simmer for 18-20 minutes.
  4. Stir in chopped apples and simmer for an additional 2-3 minutes until slightly softened.
  5. Garnish with parsley if desired before serving warm.
