  • 1 cup green olives (pitted and chopped)
  • 1 cup black olives (pitted and chopped)
  • 1/2 cup roasted red peppers (chopped)
  • 1/4 cup pickled vegetables (chopped, like giardiniera)
  • 2 cloves garlic (minced)
  • 1/4 cup fresh parsley (chopped)
  • 1/4 cup olive oil
  • 2 tablespoons apple vinegar
  • 1 teaspoon dried oregano
  • 1/2 teaspoon red pepper flakes
  • Salt and pepper (to taste)
  • 1 large round loaf of Italian or French bread
  • 1/4 lb sliced Genoa turkey slices
  • 1/4 lb sliced chicken breast
  • 1/4 lb sliced mortadella
  • 1/4 lb sliced provolone cheese
  • 1/4 lb sliced mozzarella cheese

Instructions

  1. Prepare the olive salad by combining chopped olives, roasted red peppers, pickled vegetables, minced garlic, parsley, olive oil, apple vinegar, oregano, red pepper flakes, salt, and pepper in a medium bowl. Let it marinate for at least 30 minutes.
  2. Slice the bread horizontally and hollow out some soft interior to prevent sogginess.
  3. Spread half of the olive salad on the bottom half of the bread. Layer with turkey slices first, followed by chicken, mortadella, provolone, and mozzarella. Top with remaining olive salad.
  4. Press down with the top half of the bread and wrap tightly in plastic wrap. Place a heavy skillet on top for at least 1 hour.
  5. Unwrap and slice into wedges before serving.
