  • 4 tbsp unsalted butter, melted
  • 8 oz cream cheese, softened
  • 1/2 cup granulated sugar
  • 1/2 cup sour cream
  • 1/4 cup fresh lemon juice
  • Zest of 1 lemon
  • 1 tsp vanilla extract

Instructions

  1. Preheat your oven to 325°F (160°C) and line a muffin tin with paper liners.
  2. In a bowl, mix graham cracker crumbs and melted butter until combined. Press one tablespoon into each muffin liner to form the crust.
  3. Beat softened cream cheese in another bowl until smooth. Gradually add sugar, sour cream, lemon juice, lemon zest, and vanilla extract; mix until creamy.
  4. Spoon the filling over each crust until three-quarters full. Bake for 18-20 minutes until set but slightly jiggly in the center.
  5. Let cool at room temperature for one hour before chilling in the fridge for at least two hours before serving.
