  • 1/4 cup unsalted butter, melted and slightly cooled
  • 1/2 cup packed light or dark brown sugar
  • 1 large egg, at room temperature
  • 1 and 1/2 teaspoons pure vanilla extract
  • 3/4 cup pumpkin puree (not pumpkin pie filling)
  • 1/2 cup milk (any kind)
  • 1/2 cup granulated sugar
  • 2 teaspoons ground cinnamon
  • 1/4 cup unsalted butter, melted

Instructions

  1. Preheat your oven to 350°F (177°C) and prepare a mini muffin pan with nonstick spray.
  2. In a large bowl, whisk together whole wheat flour, baking powder, pumpkin pie spice, ground cinnamon, and salt.
  3. In another bowl, mix melted butter and brown sugar until smooth. Add egg, vanilla extract, pumpkin puree, and milk; whisk until well combined.
  4. Pour the wet mixture into the dry ingredients and gently stir until just combined.
  5. Fill each muffin tin about two-thirds full with batter.
  6. Bake for 12-14 minutes or until a toothpick inserted comes out clean.
  7. Let cool for 10 minutes before dipping in melted butter and rolling in cinnamon-sugar.
