  • 1/4 cup mayonnaise
  • 1/4 cup sour cream
  • 1/2 tablespoon lime juice
  • 1½ teaspoons chili powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon garlic powder
  • Optional: cayenne pepper for extra heat (1/4 teaspoon)
  • For garnish: crumbled queso fresco and chopped cilantro

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, mix the corn, mayonnaise, sour cream, lime juice, chili powder, salt, garlic powder, and optional cayenne pepper until well combined.
  3. Lay the chicken breasts in a casserole dish and season with salt and garlic powder.

  5. Bake in the preheated oven for 30-40 minutes until the chicken reaches an internal temperature of 165°F (74°C).
