  • 23 garlic cloves (pressed)
  • 1½ tbsp taco seasoning
  • 3 cups chicken stock
  • 12 oz whole wheat or gluten-free pasta
  • 15 oz salsa (one can)
  • 1 chipotle in adobo sauce (minced)
  • 15 oz black beans (one can)
  • 1 lb grilled chicken (chopped)
  • 1 jalapeño
  • 1 tbsp lime juice (freshly squeezed)
  • ½ lb cherry tomatoes
  • ¼ cup fresh cilantro leaves (plus extra to serve)

Instructions

  1. Slice the onion and jalapeño; quarter the tomatoes and chop cilantro.
  2. In a skillet, heat olive oil over medium heat. Add onion and garlic; sauté until translucent (about 5 minutes).
  3. Pour in taco seasoning and chicken stock; bring to a boil. Stir in pasta, salsa, and minced chipotle pepper. Reduce heat and simmer until pasta is tender (about 20 minutes).
  4. Once cooked, mix in black beans, diced grilled chicken, jalapeño slices, and lime juice. Cook for an additional 2-3 minutes.
  5. Serve hot, topped with cherry tomatoes and extra cilantro.
