  • 1 lb flank steak (or sirloin/NY strip)
  • 1 pint grape or cherry tomatoes
  • ½ medium red onion
  • 1 head romaine lettuce
  • 1 large cucumber
  • ⅓ cup pitted kalamata olives
  • 1 cup garlic hummus
  • ½ cup crumbled feta cheese
  • 1 cup plain yogurt
  • Juice of ½ lemon
  • 2 Tbsp olive oil or avocado oil
  • 1 large clove garlic, finely minced
  • ½ tsp dried oregano
  • ½ tsp dried dill
  • ½ tsp salt
  • 2 tsp chopped fresh mint

Instructions

  1. Prepare the dressing by whisking yogurt, olive oil, lemon juice, minced garlic, oregano, dill, salt, and mint in a bowl.
  2. Preheat your grill to high heat (450℉).
  3. Season the flank steak with salt and pepper.
  4. Skewer cherry tomatoes and red onion chunks; lightly oil and season.
  5. Grill the steak for about 4–5 minutes per side for medium-rare; grill veggies until softened (5–8 minutes).
  6. Let the steak rest for 10 minutes before slicing.
  7. Assemble bowls with romaine lettuce as the base; top with sliced steak, grilled veggies, hummus, cucumbers, olives, and feta.
  8. Drizzle with herbed yogurt dressing and garnish as desired.
