  • 1 cup dry Pearl (or Israeli) couscous
  • 1 15.5 oz can chickpeas, drained & rinsed
  • 1 cup grape tomatoes, halved
  • 3 baby cucumbers, chopped
  • 1/3 cup diced red onion
  • 1/2 cup feta cheese (optional)
  • 1 lemon, juiced
  • 2 tbsp olive oil
  • 1 1/2 tsp garlic powder
  • 1 tsp dried oregano
  • Salt & pepper to taste

Instructions

  1. Cook the couscous according to package instructions. Once cooked, set aside to cool.
  2. While the couscous cools, chop the grape tomatoes and cucumbers and drain and rinse the chickpeas.
  3. In a large bowl, combine the cooled couscous with chickpeas, tomatoes, cucumbers, red onion, and feta cheese if using.
  4. In a small bowl, whisk together lemon juice, olive oil, garlic powder, oregano, salt, and pepper. Pour over the salad and toss until well combined.
  5. Chill in the fridge for at least 30 minutes before serving to let the flavors meld.
