  • 3 cloves garlic, minced
  • 1/2 tsp red pepper flakes
  • 1/2 cup sun-dried tomatoes, chopped
  • 3/4 cup heavy cream
  • 1/2 cup chicken broth
  • 1/2 cup grated Parmesan
  • Salt and pepper to taste
  • Fresh basil for garnish

Instructions

  1. Cook the pasta according to package directions; reserve 1/4 cup of pasta water.
  2. In a large skillet over medium heat, combine olive oil and butter until melted.
  3. Add shrimp in a single layer; season with salt and pepper. Cook for about two minutes per side until pink. Remove from skillet.
  4. In the same skillet, sauté garlic and red pepper flakes until fragrant (about 30 seconds).
  5. Mix in sun-dried tomatoes; stir well.
  6. Pour in heavy cream and chicken broth; simmer for about three minutes.
  7. Stir in Parmesan cheese and reserved pasta water until the sauce thickens slightly.
  8. Return shrimp to the skillet and simmer for another minute.
  9. Add cooked pasta to the skillet; toss gently to combine.
  10. Garnish with fresh basil before serving.
