  • 1/4 cup sun-dried tomatoes in oil, finely chopped
  • 1/4 cup tomato paste
  • 2 cups chicken broth
  • 1 lb cheese tortellini
  • 1 cup heavy cream
  • 3 cups spinach, roughly chopped
  • Fresh basil (for garnish)
  • Black pepper (to taste)
  • Red pepper flakes (to taste)
  • Parmesan (for garnish)

Instructions

  1. Season chicken with salt, pepper, Italian seasoning, and smoked paprika. In a skillet, heat butter and olive oil over medium-high heat. Add chicken and sauté until golden brown (6-7 minutes). Remove from skillet.
  2. In the same skillet, add olive oil and sauté minced shallot until translucent. Add garlic and red pepper flakes; cook until fragrant (1 minute). Stir in sun-dried tomatoes, tomato paste, and chicken broth.
