Ingredients

  • Whole chicken (5-10 lbs)
  • Salted butter (1/2 cup)
  • Extra virgin olive oil (2 tablespoons)
  • Smoked paprika (2 teaspoons)
  • Black pepper (2 teaspoons)
  • Garlic powder (2 teaspoons)
  • Dried thyme (2 teaspoons)
  • Garlic cloves (4, crushed)
  • Onions (2, quartered)
  • Lemons (2, halved and sliced)
  • Organic chicken stock (1 cup)
  • Pure maple syrup (1 1/2 cups)
  • Whole cranberries (1 cup, fresh or frozen)
  • Organic cranberry juice (1/2 cup)

Instructions

  1. In a bowl, mix softened butter with olive oil, smoked paprika, black pepper, garlic powder, dried thyme, and crushed garlic.
  2. Rub the marinade all over the chicken and inside its cavity. Stuff with quartered onions and lemon slices.
  3. Place additional onion quarters and lemon slices in a roasting pan along with chicken stock, maple syrup, and cranberry juice.
  4. Preheat the oven to 375°F (190°C). Roast the chicken uncovered for about 90 minutes or until the internal temperature reaches 165°F (75°C).
  5. Let the chicken rest for 10-15 minutes before carving and serve it with roasted onions and cranberries.
