  • 12 ounces Fresh Mixed Salad Greens
  • 1 1/2 cups Cherry Tomatoes (Halved or Quartered)
  • 1/2 Red Onion (chopped)
  • 4 large Hardboiled Eggs (Chopped or Sliced)
  • 1 cup Frozen Green Peas (thawed)
  • 1 1/2 cups Shredded Colby Jack Cheese
  • 1 1/4 cups Mayonnaise
  • 1 tbsp Sugar-Free Honey
  • 1/3 cup Grated Parmesan
  • 2 tsp Apple Cider Vinegar
  • 1/2 tsp Garlic Powder
  • Salt and Pepper (to taste)

Instructions

  1. In a bowl, combine mayonnaise, sugar-free honey, grated Parmesan, apple cider vinegar, garlic powder, salt, and pepper. Mix until smooth.
  2. In a large salad bowl, layer the fresh mixed greens at the bottom.
  3. Add halved cherry tomatoes over the greens.
  4. Sprinkle chopped red onion followed by chopped hardboiled eggs.
  5. Layer thawed green peas on top.
  6. Spread the prepared dressing evenly over the peas.
  7. Finish with shredded cheese and crumbled bacon pieces.
