  • 6 ounces Extra Firm Tofu
  • 1 tbsp Olive Oil
  • 1 1/2 cups Chopped Purple Cabbage
  • 6 cups Green Leaf Lettuce (chopped)
  • 1 Avocado (sliced)
  • 1/4 cup Carrots (shredded)
  • 1/3 cup Red Onions (chopped)
  • 1/2 cup Cucumber (sliced)
  • 1/4 cup Green Onions (chopped)
  • 3 tbsp Cilantro (chopped)
  • 1/4 cup Mayonnaise
  • 1 tbsp Sriracha Hot Sauce

Instructions

  1. In a pan over medium-high heat, warm olive oil. Pat tofu dry, cut into chunks, and cook until crispy on both sides. Season with salt and pepper.
  2. In three bowls, combine green leaf lettuce and chopped purple cabbage as the base.
  3. Mix mayonnaise and sriracha in a small bowl to create the spicy mayo dressing.
  4. Layer each bowl with cucumbers, shredded carrots, avocado slices, green onions, crispy tofu, grilled chicken strips, and red onions atop the salad base.
  5. Finish by sprinkling fresh cilantro over the bowls and drizzling with spicy mayo.
