  • 1 1/2 cup Almond flour
  • 1/4 cup Powdered erythritol
  • 1/2 cup Butter
  • 4 Eggs
  • 3/4 cup Granulated erythritol (or ½ cup monk fruit)
  • 1/3 cup Lemon juice
  • 1/2 tsp Baking powder
  • 1 tbsp Coconut flour

Instructions

  1. Preheat your oven to 350°F (175°C) and prepare a 9×9 square baking pan with nonstick cooking spray.
  2. In a mixing bowl, combine almond flour and powdered erythritol. Stir in melted butter until crumbly, then press into the bottom of the prepared pan.
  3. Bake the crust for about 15 minutes until golden, then let it cool slightly.
  4. For the filling, blend eggs and granulated erythritol in a food processor until smooth. Add lemon juice, baking powder, and coconut flour; blend until combined.
  5. Pour the filling over the cooled crust and bake for an additional 20 minutes or until set.
  6. Let cool completely before slicing into squares.
