  • 1 pound Boneless Skinless Chicken Breasts
  • 1 Red Bell Pepper (chopped)
  • 1/2 Onion (chopped)
  • 3 tsp Greek Seasoning
  • 1 tsp Oregano
  • 2 tsp Minced Garlic
  • Juice from 1/2 a Lemon
  • 1 Zucchini (chopped)
  • 2 Roma Tomatoes (chopped)
  • 3 ounces Cream Cheese (softened)
  • 4 cups Chicken Broth
  • 1/4 cup Feta Cheese
  • 1/4 cup Greek Olives

Instructions

  1. Place chicken breasts at the bottom of your crockpot and sprinkle with Greek seasoning and oregano.
  2. Add the chopped onions, bell peppers, zucchini, Roma tomatoes, minced garlic, and softened cream cheese.
  3. Pour in the juice from half a lemon and add the chicken broth.
  4. Cover and cook on high for approximately three hours.
  5. After cooking, remove the chicken, shred it using two forks, then return it to the crockpot.
  6. Stir everything together well before garnishing with feta cheese and Greek olives.
