  • 1 Spaghetti Squash
  • 12 ounces Shredded Chicken
  • 1 cup Shredded Cheddar Cheese
  • 3 ounces Cream Cheese
  • 1 ounce Sour Cream
  • 1 tsp Garlic Powder
  • 1 can ROTEL tomatoes with green chilis (14.7 ounces)
  • Fresh Parsley (for garnish)

Instructions

  1. Preheat oven to 400°F (200°C). Cut the spaghetti squash in half lengthwise, remove seeds, and place cut-side down on a baking sheet lined with parchment paper. Bake for 30-40 minutes until tender.
  2. In a bowl, mix shredded chicken, cream cheese, sour cream, garlic powder, and ROTEL tomatoes until smooth.
  3. Once the squash is ready, use a fork to scrape out strands into a large bowl. Fold in the cheesy chicken mixture until well combined.
  4. Transfer back into the squash shells or a baking dish. Top with additional cheddar cheese and bake at 350°F (175°C) for another 10-15 minutes until bubbly.
