  • 6 slices turkey bacon, cut into pieces
  • 34 carrots, sliced
  • 2 stalks celery, diced
  • 2 cloves garlic, minced
  • 1 head cauliflower, coarsely chopped
  • 4 cups vegetable or chicken broth
  • 1 cup milk (or coconut milk for dairy-free)
  • 1 tsp xanthan gum
  • Sea salt and pepper to taste

Instructions

  1. In a large pot over medium heat, cook the turkey bacon until crispy. Remove and set aside.
  2. In the same pot, sauté sliced carrots and diced celery until softened (about 5 minutes). Add minced garlic and cook for another minute.
  3. Stir in chopped cauliflower and broth; bring to a simmer. Cook until cauliflower is tender (about 15 minutes).
  4. Blend the mixture using an immersion blender until smooth (or blend in batches in a regular blender).
  5. Return to low heat; stir in milk and xanthan gum. Season with salt and pepper to taste; simmer for an additional 5 minutes.
  6. Serve hot, garnished with crispy bacon.
