  • 4 large russet potatoes
  • 2 lbs steak (NY strip, ribeye, sirloin, or tenderloin)
  • 2 tablespoons avocado oil (divided)
  • 2 tablespoons cajun seasonings
  • 2 teaspoons kosher salt
  • 4 tablespoons olive oil
  • 1.5 tablespoons sea salt
  • 2 tablespoons garlic, minced (about 810 cloves)
  • 6 tablespoons butter, softened
  • 1.5 cups heavy cream
  • 2/3 cup parmesan, grated
  • 2 tablespoons fresh parsley, minced
  • 2 wedges lemon (juice of)
  • 1/21 teaspoon red pepper flakes
  • 1 teaspoon freshly cracked pepper

Instructions

  1. Preheat your oven to 400°F (200°C). Scrub the potatoes clean and poke holes in them with a fork. Rub with avocado oil and sprinkle with salt before baking for about 60 minutes until tender.
  2. While the potatoes bake, cut the steak into bite-sized pieces. Toss with cajun seasoning and salt. In a skillet with heated avocado oil, cook the steak bites in batches until browned on all sides.
  3. In the same skillet, sauté minced garlic in olive oil until fragrant. Add heavy cream and simmer gently before whisking in butter and Parmesan cheese until smooth.
  4. Once baked potatoes are ready, slice them open, fluff their insides, drizzle the creamy sauce over each potato, top with steak bites, and garnish with parsley.
