  • 1/2 cup salted butter, softened
  • 1/3 cup white sugar
  • 1/4 cup light brown sugar
  • 2 eggs
  • 2 cups all-purpose flour
  • 2 tsp baking powder
  • 1/4 tsp salt
  • 1 1/4 cup milk (of choice)
  • 2 tbsp fresh lemon zest
  • 2 tbsp fresh lemon juice
  • 1 tbsp poppy seeds
  • 2 tsp vanilla

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Cream together the softened butter, white sugar, and light brown sugar until light and fluffy.
  3. Add eggs one at a time, mixing well after each addition.
  4. In a separate bowl, whisk together flour, baking powder, and salt.
  5. Gradually add the dry mixture alternately with milk into the batter.
  6. Fold in lemon zest, lemon juice, vanilla extract, and poppy seeds.
  7. Line a muffin tin with liners and fill each about three-quarters full with batter.
  8. Bake for approximately 20 minutes or until golden brown on top.
  9. Allow to cool completely before glazing.
