  • 1 bunch asparagus (trimmed and cut into bite-sized pieces)
  • 4 cloves garlic (minced)
  • Juice and zest of 1 lemon
  • 2 tablespoons olive oil
  • 1 tablespoon butter (optional)
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon red pepper flakes (optional)
  • 2 tablespoons freshly chopped parsley

Instructions

  1. Rinse the shrimp under cold water, dry with paper towels, then season with salt and black pepper.
  2. Trim off the woody ends of the asparagus stalks and cut them into 2-inch pieces.
  3. In a large skillet over medium heat, add olive oil and sauté minced garlic for about 1-2 minutes until fragrant.
  4. Increase heat to medium-high, add seasoned shrimp, cooking for about 2-3 minutes per side until pink and opaque. Remove shrimp from the skillet.
  5. In the same skillet, add remaining olive oil and asparagus; cook for 3-4 minutes until tender-crisp.
  6. Return shrimp to the skillet, squeeze in fresh lemon juice and sprinkle lemon zest; toss gently for an additional minute or two.
  7. Serve warm, garnished with parsley and optional red pepper flakes.
