  • 16 ounces cream cheese (at room temperature)
  • 2 large eggs (at room temperature)
  • 1/2 cup granulated sugar
  • 2 teaspoons finely grated lemon zest (from 1 medium lemon)
  • 3 tablespoons freshly squeezed lemon juice (from 1 medium lemon)
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon kosher salt
  • 2 cups fresh blueberries (divided)
  • powdered sugar (optional)

Instructions

  1. Preheat the oven to 350°F (175°C). In a bowl, mix melted butter, graham cracker crumbs, sugar, and salt. Press the mixture into an 8×8-inch baking dish.
  2. In another bowl, beat room temperature cream cheese until smooth. Add eggs one at a time, mixing well. Stir in sugar, lemon zest, lemon juice, vanilla extract, and salt until combined.
  3. Fold in one cup of fresh blueberries into the cream cheese mixture. Pour over the crust.
  4. Bake for about 35 minutes until set but slightly jiggly in the center. Cool completely before refrigerating for at least three hours.
  5. Cut into squares and dust with powdered sugar if desired.
