  • 1 bunch asparagus, trimmed and cut into 2-inch pieces
  • 2 tbsp extra virgin olive oil
  • 3 cloves garlic, minced
  • Zest of 1 large lemon
  • Juice of 1 large lemon (about 34 tablespoons)
  • Salt and pepper to taste
  • Fresh parsley, chopped for garnish

  1. Cook the pasta in a large pot of salted boiling water according to package directions until al dente.
  2. Preheat the grill or grill pan over medium-high heat.
  3. Toss shrimp with 1 tablespoon olive oil, salt, and pepper; grill for 2-3 minutes per side until pink and opaque.
  4. In a skillet, heat remaining olive oil; sauté minced garlic for about 30 seconds before adding asparagus. Cook until bright green and tender.
  5. Drain pasta (reserve some water) and add to the skillet; toss gently with asparagus.
  6. Stir in lemon zest, juice, and grilled shrimp; adjust seasoning with salt and pepper as desired. Add reserved pasta water if needed for consistency.
