Ingredients

Scale
  • 1 tablespoon avocado oil
  • 1 lb ground chicken
  • 3 tablespoons low-sodium soy sauce
  • 2 tablespoons brown sugar
  • 3 cloves garlic, minced
  • 2 cups kimchi, roughly chopped
  • 8 fajita-size flour tortillas
  • Fresh veggies: cucumbers, carrots, avocado
  • Sriracha mayo (optional)

Instructions

  1. Cook the Chicken: Heat avocado oil in a skillet over medium-high heat. Add ground chicken and cook until browned (5-6 minutes). Season with salt and pepper. Whisk together soy sauce, brown sugar, garlic, ginger paste, peanut butter, sesame oil, sriracha (if desired), and warm water. Pour over the chicken and stir until well coated.
  2. Caramelize the Kimchi: In another skillet with avocado oil over medium heat, add chopped kimchi. Cook for about five minutes until moisture evaporates. Stir in brown sugar and continue cooking until softened and caramelized.
  3. Prepare Fresh Ingredients: Slice cucumbers and carrots into julienne strips and chop fresh herbs.
  4. Assemble Tacos: Warm tortillas and fill each with a scoop of chicken, followed by caramelized kimchi and fresh veggies. Top with avocado slices and crushed peanuts; drizzle with sriracha mayo if using.
