  • 1-inch piece fresh ginger, grated
  • 1 tablespoon rice vinegar
  • 2 cups cooked rice (white or brown)
  • 1 cup kimchi
  • 1 cucumber, thinly sliced
  • 1 carrot, julienned
  • 2 green onions, chopped
  • 1 tablespoon toasted sesame seeds

Instructions

  1. In a mixing bowl, whisk together soy sauce, gochujang, sesame oil, honey, garlic, ginger, rice vinegar, sesame seeds, and black pepper to create the marinade.
  2. Add chicken thighs to the marinade; ensure they are well-coated. Cover and refrigerate for at least one hour (overnight is ideal).
  3. Preheat your grill or grill pan over medium-high heat. Grill chicken for about 6-7 minutes per side until fully cooked.
  4. Let the grilled chicken rest for 5 minutes before slicing into bite-sized pieces.
  5. Assemble your bowls by dividing rice among servings and topping with grilled chicken, cucumber slices, julienned carrots, and kimchi.
