  • 1/2 cup Celery (chopped)
  • 1/2 Medium Onion (chopped)
  • 2 tsp Garlic (minced)
  • 1/2 cup Diced Tomatoes
  • 1 tbsp Tomato Paste
  • 2 tbsp Capers
  • 3 cups Vegetable Stock
  • 8 ounces Salmon (cooked and flaked)
  • 1 tsp Dried Basil
  • 1 Bay Leaf
  • 1 cup Coconut Milk (canned)
  • 2 ounces Cream Cheese

Instructions

  1. Melt butter in a pot over medium heat.
  2. Add chopped onion and celery; sauté until softened.
  3. Stir in minced garlic; cook for another 30 seconds.
  4. Add diced tomatoes, tomato paste, capers, dried basil, bay leaf, and cream cheese; combine well.
  5. Pour in vegetable stock and whisk to mix thoroughly.
  6. Bring to a low boil, then gently mix in cooked salmon and coconut milk.
  7. Season with salt and pepper; simmer on low for 5-10 minutes.
  8. Serve warm, garnished with fresh bell pepper if desired.
