  • 11 large egg whites (room temperature)
  • 1/4 cup pumpkin puree
  • 2 tsp pumpkin pie spice
  • 2/3 cup Swerve confectioner's sugar substitute
  • 1 scoop vanilla protein powder
  • 2 cups almond flour
  • 1/4 tsp xanthan gum
  • 1/2 tsp cream of tartar
  • 1/2 tsp almond extract
  • 1 tsp vanilla extract

Instructions

  1. Preheat oven to 325°F (163°C).
  2. Sift together almond flour, Swerve sugar substitute, pumpkin pie spice, protein powder, and xanthan gum.
  3. Beat egg whites with cream of tartar until medium peaks form.
  4. Gently fold in almond and vanilla extracts into egg whites.
  5. Carefully incorporate pumpkin puree into the egg whites.
  6. Fold dry mixture into egg whites until well combined.
  7. Pour batter into an ungreased angel food cake pan and bake for 40 minutes.
  8. Invert cake onto a rack to cool before releasing from the pan.
  9. Dust with sugar substitute and cinnamon before serving.
