  • 23 jalapeño peppers, seeded and finely chopped
  • 1/2 cup shredded cheddar cheese
  • 1/4 cup honey
  • Zest and juice of 1 lime

Instructions

  1. Preheat the oven to 375°F (190°C) and grease a 9-inch square baking dish or cast iron skillet.
  2. In a mixing bowl, whisk together flour, cornmeal, sugar, baking powder, and salt.
  3. In another bowl, combine buttermilk, melted butter, and eggs until well mixed.
  4. Pour the wet mixture into the dry ingredients and stir until just combined.
  5. Fold in corn kernels, chopped jalapeños, and shredded cheddar cheese.
  6. Pour the batter into the prepared dish and bake for 25-30 minutes until golden brown.
  7. While baking, mix honey with lime zest and juice for the glaze.
