  • 6 large eggs
  • 4 strips turkey bacon, cooked and crumbled
  • 3 tablespoons mayonnaise
  • 1 tablespoon Dijon mustard
  • 1 teaspoon apple cider vinegar
  • 1/2 teaspoon sugar
  • Pinch of salt
  • Pinch of black pepper
  • Smoked paprika for garnish
  • Chives for garnish (optional)

Instructions

  1. Boil the eggs by placing them in cold water in a saucepan. Bring to a boil over high heat.
  2. Once boiling, cover and let sit off heat for 10-12 minutes.
  3. Transfer the eggs to an ice bath for about 5 minutes.
  4. Peel the cooled eggs, slice them in half lengthwise, and scoop out yolks into a bowl.
  5. Mash yolks until smooth, then mix in mayonnaise, mustard, vinegar, sugar, salt, and pepper.
  6. Stir in most of the crumbled turkey bacon (reserve some for garnish).
  7. Spoon or pipe the mixture back into egg white halves.
  8. Garnish with reserved bacon, smoked paprika, and chives.
  9. Chill for at least 30 minutes before serving.
