  • 1 cup plus 2 tablespoons all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon cinnamon

  • 1/2 cup granulated sugar
  • 1/2 cup light brown sugar, packed
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 tablespoon molasses or honey
  • 1/2 cup powdered sugar, sifted
  • 1 to 2 tablespoons whole milk

Instructions

  1. Preheat your oven to 350°F (175°C) and line an 8×8 inch baking pan with parchment paper.
  2. Melt the butter in a bowl and let it cool slightly. Pulse the oats in a food processor until broken but not flour-like.
  3. In a separate bowl, whisk together the pulsed oats, flour, baking soda, cinnamon, and salt.
  4. Combine the cooled butter with granulated and brown sugars until sandy in texture. Mix in the egg, vanilla extract, and molasses.
  5. Fold the dry ingredients into wet until just combined; avoid overmixing.
  6. Spread the mixture evenly in the prepared pan and bake for 20 to 24 minutes until golden brown around the edges.
  7. Allow cooling for at least 1 hour before icing with a mixture of powdered sugar and milk.
