  • 1/4 tsp ground ginger
  • 1/4 tsp ground cloves
  • 1 cup granulated sugar
  • 1/2 cup packed brown sugar
  • 1 cup canned pumpkin puree (not pumpkin pie filling)
  • 1/2 cup vegetable oil
  • 2 eggs (large)
  • 1 tsp vanilla extract
  • 8 oz cream cheese (softened)
  • 1/2 cup unsalted butter (softened)
  • 34 cups powdered sugar (sifted)
  • 1 1/2 tsp vanilla extract
  • 1/8 tsp salt

Instructions

  1. Preheat oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. In a bowl, beat together cream cheese and sugar until smooth; add egg yolk and vanilla; mix well for the filling.
  3. In another bowl, whisk flour, baking soda, salt, and spices together.
  4. In a separate bowl, mix sugars and pumpkin puree; add oil, eggs, and vanilla.
  5. Fold dry ingredients into wet mixture until just combined.
  6. Fill muffin liners halfway with batter; add cream cheese filling; cover with more batter until three-quarters full.
  7. Bake for about 18-22 minutes or until a toothpick comes out clean from the batter.
  8. Cool muffins on a wire rack before frosting with whipped cream cheese mixture.
