  • 34 medium heirloom tomatoes (sliced)
  • 6 ounces mascarpone cheese
  • 2 large eggs
  • 1 clove garlic (grated)
  • Fresh oregano (chopped)
  • 1 teaspoon sumac
  • Salt and freshly cracked black pepper
  • Brightland Alive Extra Virgin Olive Oil (for drizzling)

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Roll out puff pastry on a floured surface to about 12 inches in diameter.
  3. In a bowl, mix mascarpone, one egg, grated garlic, chopped oregano, salt, sumac, and pepper until combined.
  4. Spread the mascarpone mixture onto the center of the pastry, leaving a border for folding.
  5. Layer sliced heirloom tomatoes on top of the filling.
  6. Fold the edges of the pastry over the filling to create pleats; brush with the second beaten egg.
  7. Bake for approximately 35 minutes or until golden brown.
