  • 12 vanilla wafer cookies
  • 16 ounces cream cheese, softened
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/4 cup sour cream
  • 1/4 cup seedless raspberry jam
  • Fresh raspberries (for garnish, optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. Place one vanilla wafer cookie at the bottom of each liner.
  3. In a mixing bowl, beat the softened cream cheese and sugar until smooth.
  4. Add eggs one at a time, mixing well after each addition. Stir in vanilla extract and sour cream until combined.
  5. Fill the liners with cheesecake batter about 3/4 full.
