  • 2 medium carrots, chopped
  • 2 stalks celery, chopped
  • 1 medium zucchini, diced
  • 1 (14.5 oz) can diced tomatoes (no salt added)
  • 4 cups low-sodium vegetable broth
  • 2 cups fresh spinach or kale
  • 1 tsp Italian seasoning
  • Salt and pepper to taste

Instructions

  1. In a large pot, heat olive oil over medium heat. Sauté diced onion until translucent (about 5 minutes), then add minced garlic and cook until fragrant (1 minute).
  2. Stir in chopped carrots and celery; cook until softened (about 7 minutes).
  3. Add diced zucchini and canned tomatoes (with juice); mix well.
  4. Pour in vegetable broth along with Italian seasoning, salt, and pepper. Bring to a boil, then reduce heat and simmer for 20 minutes.
  5. In the last five minutes, add fresh spinach or kale until wilted.
  6. Serve hot, optionally accompanied by crusty bread.
