  • 1 red bell pepper
  • 1 red onion
  • 1 jalapeno
  • 16 oz frozen corn
  • 4 cups cooked chicken breast
  • 1/2 cup light mayo
  • 1/2 cup plain nonfat Greek yogurt
  • Zest and juice of 1 lime
  • 1/2 tsp cumin
  • 1 tsp paprika
  • 1/2 tsp kosher salt
  • 2 tsp chili powder
  • 1 bunch scallions
  • 1/2 cup fresh cilantro

Instructions

  1. Preheat oven to 400°F (200°C). Chop red bell pepper, onion, and jalapeno; combine with frozen corn on a sheet pan. Lightly spray with olive oil and sprinkle with salt. Roast for 20-25 minutes until veggies are tender.
  2. While vegetables roast, prepare the dressing by whisking together light mayo, Greek yogurt, lime zest and juice, cumin, paprika, additional salt, and chili powder in a bowl until smooth.
  3. Once roasted veggies cool slightly, chop cooked chicken into chunks. In a large bowl, combine chicken, roasted vegetables, chopped scallions, cilantro, and dressing; toss until well mixed.
  4. Serve immediately or chill in the fridge for later. Enjoy over greens or in wraps.
