  • 34 cups kale, chopped (stems discarded)
  • 32 oz chicken broth
  • 1 cup sour cream
  • ½ tsp salt
  • ½ tsp black pepper or red pepper flakes
  • 1 tsp dried thyme
  • ½ tsp dried oregano
  • ½ tsp dried basil
  • ½ tsp olive oil

Instructions

  1. In a skillet over medium heat, brown the ground turkey until fully cooked.
  2. In your slow cooker, combine the cooked turkey with garlic, onion, potatoes, cauliflower, kale, chicken broth, salt, pepper, thyme, oregano, and basil.
  3. Stir well to mix all ingredients evenly.
  4. Cover the slow cooker and cook on low for about 3 hours or until vegetables are tender.
  5. Just before serving, stir in sour cream until well combined.
