  • ½ tsp onion powder
  • ½ tsp garlic powder
  • ⅛ tsp cracked black pepper
  • Salt (to taste)
  • 3 garlic cloves (minced, added at the end)
  • 1 can diced tomatoes (1415 oz)
  • 8 oz tomato sauce
  • 1 can black beans (drained and rinsed)
  • 1 cup frozen roasted sweet corn
  • 1 quart chicken broth
  • Fresh cilantro (chopped)
  • Shredded cheddar cheese
  • Lime wedges

Instructions

  1. Heat olive oil in a large pot over medium heat. Sauté diced onion until translucent.
  2. Add ground chicken, cooking until browned.
  3. Stir in cumin, coriander, onion powder, garlic powder, cracked black pepper, and salt.
  4. Mix in minced garlic and continue cooking for one more minute.
  5. Pour in diced tomatoes, tomato sauce, black beans, corn, and chicken broth.
  6. Bring to a boil, then reduce heat and let simmer for 25 minutes.
