  • 8 tbsp cold salted butter (diced)
  • 3 tbsp milk
  • 1 tbsp maple syrup
  • 4 tbsp ice cold water
  • 68 large apples (Honeycrisp, Cortland, or Granny Smith)
  • 1 1/2 tsp cinnamon
  • 1/8 tsp nutmeg
  • 2 tsp lemon juice
  • 1/3 cup brown sugar
  • 2 tbsp cornstarch

Instructions

  1. For the crust, combine whole wheat pastry flour and salt in a bowl. Cut in cold butter until it resembles small peas.
  2. Add milk, maple syrup, and ice water; mix until combined. Form into two disks, wrap in plastic wrap, and chill for at least 30 minutes.
  3. Preheat oven to 425°F (220°C). Prepare the apple filling by mixing lemon juice, brown sugar, vanilla extract, cinnamon, and nutmeg in a bowl.
  4. Peel and slice apples; coat them in the spice mixture and sprinkle with cornstarch.
  5. Roll out chilled dough and place one layer in a greased pie dish. Fill with apples and cover with another rolled-out dough layer; crimp edges to seal.
  6. Bake for 15 minutes at 425°F (220°C), then reduce temperature to 350°F (175°C) for an additional 30-35 minutes until bubbly.
