  • 2 lbs Beef Chuck Roast
  • 4 Carrots, chopped
  • 4 Yukon Gold or Russet Potatoes, diced
  • 1 large Onion, diced
  • 3 cloves Garlic, minced
  • 4 cups Low-Sodium Beef Broth
  • 2 tsp Thyme (fresh or dried)
  • 2 Bay Leaves
  • Salt and Pepper, to taste
  • 2 tbsp Olive Oil

Instructions

  1. Cut beef chuck roast into bite-sized cubes; season with salt and pepper. In a large pot, heat olive oil over medium-high heat and sear the beef until browned. Remove from the pot.
  2. In the same pot, sauté diced onions until translucent (about 5 minutes). Add minced garlic and cook for an additional minute.
  3. Return the beef to the pot along with chopped carrots and potatoes. Add enough beef broth to cover ingredients by an inch. Toss in thyme and bay leaves.
  4. Simmer on low heat for at least 2 hours until beef is tender, stirring occasionally.
  5. Adjust seasoning before serving; discard bay leaves.
