  • 4 large whole wheat tortillas
  • 1 zucchini, sliced
  • 1 red bell pepper, sliced
  • 1 red onion, sliced
  • 8 ounces fresh spinach
  • 1 cup cherry tomatoes, halved
  • 1 cup crumbled feta cheese
  • 1 cup shredded mozzarella cheese
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • Salt and pepper to taste

Instructions

  1. Preheat your grill to medium heat.
  2. In a bowl, combine zucchini, bell pepper, and onion with olive oil, salt, pepper, oregano, and basil. Toss thoroughly.
  3. Grill the veggies for about 5-7 minutes until tender with grill marks.
  4. Sauté minced garlic in olive oil until fragrant; add spinach until wilted.
  5. Assemble quesadillas by layering grilled veggies, sautéed spinach, cherry tomatoes, feta cheese, and mozzarella on half of each tortilla. Fold over.
  6. Grill quesadillas for 3-4 minutes on each side until golden brown and cheese is melted.
  7. Let cool slightly before cutting into wedges and serve warm.
