  • 1 cup orzo
  • 3 ears of corn
  • 1 bunch green scallions
  • 5 garlic cloves
  • Zest and juice of 1 medium lemon
  • 1 tbsp white grape juice vinegar
  • 1/4 cup extra virgin olive oil
  • 12 oz frozen edamame
  • 3 cups baby arugula
  • Fresh dill
  • Fresh oregano
  • Kosher salt

Instructions

  1. Cook the orzo in salted boiling water until al dente; drain and transfer to a mixing bowl.
  2. Grill the corn on medium heat for 10-12 minutes until charred; cool and cut off kernels.
  3. Sear the white parts of scallions on a hot griddle for 1-2 minutes per side.
  4. In a blender, combine sautéed garlic, seared scallions, lemon zest, juice, vinegar, olive oil, miso paste, and salt; blend until smooth.
  5. Mix corn kernels, chopped artichokes, edamame, oregano, optional red pepper flakes, arugula with the orzo; drizzle with dressing and toss gently.
  6. Serve immediately warm or chill before serving.
