  • 2 tablespoons extra virgin olive oil
  • 2 tablespoons balsamic vinegar
  • 1 tablespoon maple syrup
  • 1/2 teaspoon sea salt
  • 1 pound cherry tomatoes, halved (equivalent to 4 cups)
  • 6 ounces fresh mozzarella pearls, drained and halved
  • 1 tablespoon extra virgin olive oil
  • 8 large leaves of basil, chiffonade
  • Flaked Maldon finishing sea salt to taste
  • Balsamic reduction or balsamic vinegar
  • 2 pounds zucchini, sliced off both ends and split in half down the middle

Instructions

  1. Marinate the chicken by combining olive oil, balsamic vinegar, maple syrup, and salt in a glass container. Add chicken breasts, cover, and refrigerate for at least 2 hours or overnight.
  2. Preheat the grill to medium-high heat.
  3. Mix cherry tomatoes, mozzarella pearls, and olive oil in a bowl to create the Caprese topping.
  4. Slice basil into ribbons and stir into the tomato mixture.
