  • 1 medium onion (chopped)
  • 3 cloves garlic (minced)
  • 2 cups kale (chopped)
  • 2 cups spinach (chopped)
  • 1 cup broccoli florets
  • 1 medium cucumber (peeled and chopped)
  • 2 celery stalks (chopped)
  • 1 teaspoon fresh ginger (grated)
  • 1 teaspoon turmeric powder
  • 4 cups vegetable broth (or water for a lighter version)
  • Salt and pepper (to taste)
  • Juice of 1 lemon

Instructions

  1. Chop the onion, garlic, kale, spinach, broccoli, cucumber, and celery into bite-sized pieces.
  2. In a large pot, heat olive oil over medium heat. Sauté the chopped onions and garlic until fragrant (about 3 minutes).
  3. Add kale, spinach, broccoli, cucumber, and celery to the pot. Cook for about 5 minutes until the greens wilt.
  4. Stir in grated ginger, turmeric powder, salt and pepper. Pour in vegetable broth and bring to a gentle simmer for 15-20 minutes until veggies are tender.
  5. Use an immersion blender to puree the soup until smooth or transfer batches to a blender.
  6. Stir in lemon juice before serving hot with optional toppings like avocado or herbs.
