  • 2 pounds fresh green beans
  • 1 pint cherry or grape tomatoes
  • 1/4 cup raw pine nuts
  • 3 garlic cloves
  • Juice of 1 lemon
  • 1 tablespoon apple cider vinegar
  • 3 tablespoons olive oil
  • 1 teaspoon dried oregano
  • Salt and pepper to taste

Instructions

  1. Boil salted water in a large pot. Cook green beans for 4-6 minutes until tender-crisp. Prepare an ice bath while cooking.
  2. Drain the beans and plunge them into the ice bath for a few minutes.
  3. Combine cooled green beans and halved cherry tomatoes in a large bowl.
  4. Toast pine nuts in a skillet over medium heat for about 2 minutes until golden.
  5. In a small bowl, whisk together olive oil, minced garlic, lemon juice, oregano, salt, and pepper. Pour over salad mixture and toss well.
  6. Gently fold in toasted pine nuts before serving.
