  • 2 pounds Brussels sprouts
  • 6 to 8 salmon fillets (34 ounces each)
  • 3 tablespoons olive oil (for Brussels sprouts)
  • 1 clove garlic (for Brussels sprouts, finely minced)
  • 0.5 teaspoon salt (for Brussels sprouts)
  • 0.25 teaspoon freshly ground black pepper (for Brussels sprouts)
  • 1 tablespoon olive oil (for salmon)
  • 4 cloves garlic (for salmon, finely minced)
  • 1 tablespoon dried oregano
  • 0.75 teaspoon salt (for salmon, or to taste)
  • 0.25 teaspoon freshly ground black pepper (for salmon, or to taste)

Instructions

  1. Preheat your oven to 400°F (200°C). Trim ends off the Brussels sprouts and cut them in half if large. Toss them in a bowl with olive oil, minced garlic, salt, and pepper.
  2. Spread Brussels sprouts on a baking sheet in a single layer. Roast for 15 minutes until they begin to brown.
  3. Meanwhile, place salmon fillets on another lined baking sheet. Drizzle with olive oil and season with minced garlic, oregano, salt, and pepper.
  4. After 15 minutes, move the Brussels sprouts aside and place the salmon on the same sheet pan. Roast everything for another 10-12 minutes until the salmon flakes easily.
  5. Serve immediately alongside crispy Brussels sprouts.
