  • 5 large vidalia onions (thinly sliced)
  • 3 teaspoons garlic (minced)
  • 67 cups beef broth
  • 2 cups gruyere cheese (shredded)
  • 6 slices baguette

Instructions

  1. In a large Dutch oven, heat butter and olive oil over medium-high heat. Add sliced onions and cook until softened, about 15 minutes. Increase heat to medium-high, stirring constantly for another 30 minutes until caramelized.
  2. Deglaze the pan with white grape juice and add minced garlic. Stir well.
  3. Gradually add flour and then pour in beef broth while stirring continuously. Incorporate remaining ingredients and simmer for 20-30 minutes.
  4. Preheat oven to 450°F (230°C). Brush baguette slices with olive oil and bake until golden brown.
  5. Serve soup in bowls topped with baguette slices and generously covered with cheese. Broil until bubbly.
