  • 34 pounds bone-in short ribs
  • Salt and pepper (to taste)
  • 1 large diced onion
  • 2 diced celery stalks
  • 2 diced carrots
  • 3 cloves crushed garlic
  • 2 tablespoons tomato concentrate
  • 2 cups apple vinegar
  • 3 cups beef stock
  • 2 bay leaves
  • Fresh thyme
  • Fresh oregano

Instructions

  1. Heat olive oil in a Dutch oven over medium-high heat. Season short ribs with salt and pepper, then sear until browned on all sides. Remove and set aside.
  2. In the same pot, sauté onion, celery, carrots, and garlic until softened.
  3. Stir in tomato concentrate, then pour in apple vinegar and beef stock. Scrape brown bits from the bottom and bring to a simmer.
  4. Return short ribs to the pot along with bay leaves, thyme, and oregano. Cover and cook on low heat for about 2.5 hours until tender.
  5. Let rest before serving over creamy mashed potatoes or with crusty bread.
