  • 1 tsp black pepper
  • 8 soft flour or corn tortillas
  • 1 cup pico de gallo (fresh tomatoes, onions, cilantro, lime juice)
  • 1 cup guacamole

Instructions

  1. Trim excess fat from the brisket and rinse under cold water. Pat dry.
  2. In a bowl, mix paprika, garlic powder, onion powder, salt, and black pepper. Rub the mixture over the brisket generously.
  3. Preheat your smoker to 225°F (107°C) with hickory or mesquite wood chips. Smoke the brisket for 8-10 hours until it reaches an internal temperature of 200°F (93°C).
  4. Remove the brisket from the smoker and let it rest under foil for at least one hour.
  5. Warm tortillas on a grill until soft and pliable.
  6. Slice the rested brisket thinly against the grain. Assemble tacos by filling tortillas with brisket and topping with pico de gallo and guacamole.
